American Pancakes
Thick, fluffy American-style pancakes made with flour, milk, and egg, cooked in a skillet until golden.
This version combines the dry and wet ingredients without overmixing the batter; a few bubbles on the surface signal when to flip each pancake.

Mix the dry ingredients
In a bowl, mix the wheat flour, baking powder, sugar, and salt.

Combine the wet ingredients
In another bowl, whisk the egg with the milk and vanilla extract. Stir in the melted unsalted butter. Pour the mixture over the dry ingredients and mix just until combined; it is fine if a few small lumps remain.

Cook the pancakes
Heat a skillet over medium-low heat and lightly grease it with some of the reserved unsalted butter. Pour in a portion of batter and cook until bubbles appear on the surface and the underside is golden. Flip and cook the other side until golden as well. Repeat with the remaining batter, lightly greasing the skillet as needed.
