Brazilian Chicken Coxinhas
Brazilian bites of dough filled with shredded chicken, breaded and fried until golden.
This version of Brazilian coxinha has a chicken-and-vegetable filling and a dough made with broth, milk, and flour. Shape the bites like little drumsticks, coat them in egg and breadcrumbs, and fry them.
Method
- 01
Prepare the filling
Finely chop the parsley, red bell pepper, green bell pepper, onion, and garlic. Shred the cooked chicken into strands.
- 02
Cook the filling
Heat the olive oil in a wide pan. Add the peppers, onion, and garlic and sauté until tender. Stir in the crushed tomato, sweet paprika, salt, and parsley; mix, then add the shredded chicken.
- 03
Let the filling cool slightly
Take the filling off the heat and let it cool slightly while you prepare the dough.
- 04
Make the dough
Put the chicken broth, milk, butter, and salt in a saucepan. When the mixture begins to boil, gradually add the flour while stirring vigorously. Cook and keep stirring until a firm dough forms and pulls away from the sides.
- 05
Knead and portion the dough
Remove the dough from the pan and let it cool until lukewarm. Knead it by hand until smooth and soft; divide it into portions of about 50 g and roll each into a ball.
- 06
Fill and shape
Flatten each ball in your palm to make a hollow. Place a teaspoon of filling in the center, fold the dough over to seal it, and shape it like a little drumstick. Repeat with the remaining portions.
- 07
Bread the coxinhas
Dip each piece in the beaten egg, then coat it in breadcrumbs until fully covered.
- 08
Fry until golden
Heat the sunflower oil in a deep pan. Fry the coxinhas in batches until golden and crisp on the outside.
- 09
Drain and serve
Remove the coxinhas from the oil and drain them before serving hot.
