Condensed milk

Sweetened condensed milk is concentrated milk with added sugar. Its pronounced sweetness and thick texture suit desserts, drinks and cooked dishes. It is not the same as evaporated milk.

What it is

Sweetened condensed milk is a dairy product made by removing some of the water from milk and adding sugar. The result is thicker and sweeter than ordinary milk, and it is commonly sold in packaging that can be stored in the pantry while unopened. Do not confuse it with evaporated milk: both are concentrated by removing water, but sweetened condensed milk contains added sugar and has a different taste and texture. Products can vary, so check the label, especially when a recipe depends on a particular consistency.

When to use it

Use it when a dish needs sweetness and more body than ordinary milk provides, such as a rich dessert, pudding, cake or some drinks. It can also be added to rice pudding during cooking. Since it already supplies sugar and milk solids, take its sweetness into account when adapting a recipe rather than automatically adding all the sugar intended for another version. Do not choose it as a direct replacement for evaporated milk: the two behave differently.

How to use it

Measure the amount specified in the recipe and mix it thoroughly with the other ingredients so its sweetness and thickness are evenly distributed. In cooked dishes such as rice pudding, it can be added to the rice and milk mixture and heated gently, with careful stirring to prevent sticking, as in the reference recipe. In desserts, treat it as a sweet, creamy ingredient, not as unsweetened liquid milk. When adapting a recipe, adjust sugar and liquid cautiously and check the texture, since its thickness can make the finished dish denser.

Flavour and texture

It has a distinctly sweet, milky flavor and a thick, smooth, creamy texture. The concentrated milk and added sugar mean it tastes and pours differently from ordinary milk or evaporated milk. Brand and formulation can affect sweetness and consistency, so check the package when those details matter to a recipe.

How to choose it

Look specifically for sweetened condensed milk when a recipe calls for it; evaporated milk is not equivalent. Check the product name, ingredient list and storage instructions on the package. Products may use different proportions of milk fat, and varieties with additional ingredients may be available, so choose according to the recipe and your needs.

Storage

Store an unopened package according to its label, in a cool, dry place; unopened canned products are generally pantry-stable. After opening, refrigerate the contents and handle them as a fresh dairy product. Follow the manufacturer's instructions for the container and use-by period, and discard the product if it shows signs of spoilage.

Substitutions

Evaporated milk is not a direct substitute for sweetened condensed milk: it does not provide the same sugar or texture. If the recipe allows, adjust sweetness and consistency separately when using evaporated milk. Another option is to make concentrated milk with sugar using a reliable homemade sweetened condensed milk recipe, while allowing for a different result.

Common mistakes

A frequent mistake is confusing it with evaporated milk and swapping them without adjusting the recipe. It is also easy to add too much sugar, since condensed milk is already sweetened. Do not assume every brand has the same consistency, and check the package to identify the product and follow its directions.

Safety and allergens

Refrigerate the product after opening and follow the package's storage and use instructions. Do not consume it if the package is damaged or the contents show signs of spoilage.
