New Zealand Lolly Cake
A no-bake New Zealand sweet made with malt biscuits, butter, sweetened condensed milk and fruit sweets, shaped into a log and coated with coconut.
This version of lolly cake, also called lolly log, is made by mixing crushed malt biscuits with butter and sweetened condensed milk, then adding chopped fruit sweets. Shape the mixture into a log, coat it with desiccated coconut and refrigerate until firm enough to slice.

- 03

- 04

- 05
Shape and coat the log
Transfer the mixture to a clean surface and shape it into a log, packing it firmly with your hands. Coat all sides with desiccated coconut.
- 06
Chill and slice
Wrap the log and refrigerate it for 4 hours, until firm. Slice it to serve.
