Roasted Carrot Soup with Fennel

A vegetable soup for 4 in which the carrots are roasted and the fennel is cooked with garlic and stock before blending with orange juice.

Roasting the carrots provides a golden base for this soup, while fennel, garlic, vegetable stock, and orange juice complete the mixture. Blend gradually with the cooking liquid to adjust the consistency.
