Chickpea and Vegetable Stew with Pumpkin
A vegetarian stew for 4 made with dried chickpeas, pumpkin and green beans.
A potaje is a brothy stew made with legumes and vegetables. This version combines chickpeas, pumpkin and green beans without animal-derived ingredients.
Method
- 01
Soak the chickpeas
Cover the chickpeas with plenty of water and soak for 12 hours. Drain before cooking.

Cook the chickpeas
Bring the 2 l water to a boil, add the drained chickpeas and remove any foam that rises to the surface. Simmer for 1 to 2 hours, until tender.

Prepare the vegetables and paste
While the chickpeas cook, cut the pumpkin and green beans. Crush the garlic with the cumin and paprika to form a paste.

Finish the stew
Once the chickpeas are tender, add the pumpkin, green beans and garlic-spice paste. Cook gently until the vegetables are tender.
